Garbanzo Frittata

For this recipe we will be using two main ingredients: garbanzos and eggs. First we will be cooking the garbanzos to then add them to the eggs.

Garbanzo’s Ingredients:

Buy a small can of garbanzos since they come already cooked.


  • Garlic – ½ clove

  • Onion – ¼ cup

  • Green onion – ½ stalk

  • Pepper – ¼ cup

  • Parsley or Cilantro – add to taste

  • Salt and Pepper – add to taste


  1. Wash the garbanzos well before cooking them.

  2. Chop and diced the ingredients mentioned above for the seasoning.

  3. Stir fry them in a skillet and then pour the can of garbanzos to the mix.

  4. Mix well and add salt and pepper to taste.

  5. Cook for about 5 minutes.

  6. On a separate bowl, pour 2 – 3 eggs raw.

  7. Add the cooked garbanzos to your eggs and put them in the microwave. Set your microwave to cook the frittata for 2-3 minutes on high heat.

Note: The eggs will rise as they cook. Therefore, choose a deep bowl to prevent overflow and spills.
