Garbanzo Frittata
For this recipe we will be using two main ingredients: garbanzos and eggs. First we will be cooking the garbanzos to then add them to the eggs.
Garbanzo’s Ingredients:
Buy a small can of garbanzos since they come already cooked.
Seasoning:
Garlic – ½ clove
Onion – ¼ cup
Green onion – ½ stalk
Pepper – ¼ cup
Parsley or Cilantro – add to taste
Salt and Pepper – add to taste
Method:
Wash the garbanzos well before cooking them.
Chop and diced the ingredients mentioned above for the seasoning.
Stir fry them in a skillet and then pour the can of garbanzos to the mix.
Mix well and add salt and pepper to taste.
Cook for about 5 minutes.
On a separate bowl, pour 2 – 3 eggs raw.
Add the cooked garbanzos to your eggs and put them in the microwave. Set your microwave to cook the frittata for 2-3 minutes on high heat.
Note: The eggs will rise as they cook. Therefore, choose a deep bowl to prevent overflow and spills.
